Product Information: Organic Japanese green tea powder (matcha) for culinary use, Kabuse, is made from second-harvest whole tea leaves with veins, ground with ceramic mills. It is ideal for various hot and cold cocktails, desserts, and baked goods, adding a subtle flavor and, of course, a wonderful green color.
Unlike traditional matcha tea, Kabuse powder is made not from tencha but from whole leaves. The leaves are from Kabusecha tea bushes, which are shaded to 50% instead of 90%, growing in semi-shade. These light conditions are closest to the natural growth conditions of wild tea bushes. Kabusecha is well-balanced and incomparable to ordinary green tea powders made from sencha tea, grown without shade. Kabusecha has slightly more bitter substances than tencha but significantly less than regular tea. It is rich in tannins, vitamins, and minerals, with a bright green color and very aromatic.
Kabusecha is slowly ground with modern ceramic mills and immediately packed using protective gases. This prevents oxidation, preserving the aroma and all active substances.
Green tea powder from Kabusecha is a modern product. It is made from tea grown in semi-shade on the organic KEIKO tea plantation in Kagoshima, Kawanabe region. Near this plantation, the Manose River winds through the valley, providing ample moisture and a constant morning mist essential for growing high-quality tea. Depending on the picking time, Kabuse green tea powder comes in several varieties. First-harvest tea has an intense but delicate aroma, while second-harvest tea has more bitter substances and thus a stronger aroma. Therefore, powder from second-harvest tea leaves (which these are) is especially suitable for sweet energy drinks, gourmet desserts, and even cosmetics.
