This Bourbon vanilla is organically grown in Madagascar. There, orchids thrive in tropical forests. Small farmers engage in labor-intensive cultivation and processing. The orchid flowers are pollinated by hand, with skilled hands pollinating up to 1200 flowers per day. Each flower produces a green pod within 6–8 months. The pods are harvested by hand just before they ripen, changing from green to yellow. The pods acquire their dark brown color after months of fermentation and drying.
