The valuable volcanic soil, tree shade, and immense biodiversity characterize the regions where this Plantagen coffee is grown, along the Pacific coast of Mexico’s Sierra Madre de Chiapas. The coffee beans mature slowly in the cool climate at 1000 meters above sea level.
Since 1933, Lebensbaum has specialized in roasting the finest coffee varieties. By roasting the coffee beans slowly and in small batches at 233ºC for 16 minutes (with preheating), a wonderful aroma is revealed. This method prevents burning, the formation of carcinogenic substances, and stomach irritation. In comparison, conventional coffee is roasted at temperatures of 500–600ºC, with an average of two tons of coffee beans roasted in about 40 minutes.
